Will this add a password I can type to open the file?
No. pdf-lib in this stack cannot write Standard Security. Pages are flattened to images and stamped. Use Acrobat or qpdf if you need a real owner password.
Can someone still copy the text?
The live text layer is replaced with a JPEG of the page, so copy-paste of the original glyphs usually fails. It is still not DRM.
